e fasolet (beans)"! This very old saying describes the Feltrino
territory. It must date back to very ancient times since already
two centuries ago broad bean had been replaced in almost all the
territory by potatoes, wheat by maize and the real beans, the ones
known today as the sublime Lamon beans, had replaced the poor "fasolet"
almost everywhere.

As a consequence, agriculture, human landscape and farmer's lifestyle
changed completely by adopting new diet rules and new recipes. As
a matter of fact, we know very little of the old cuisine as well
as of the food traditions before the 17th century.
